What I did find was the Chef's Choice offered almost 'frictionless' operation of the slider that carries the meat across the blade. No other brand was as easy to move. The Chef's Choice also has a 'slider lock' that locked the slider over the blade, a definate safety and storage feature. Few of the others offered this. The Chef's Choice also appeared to be just better built with more metal and less plastic in the 'structural' parts of the unit. The Chef's Choice Model 615 (unavailable locally) also features a little heavier motor than the Model 610, and most other brands in the same price range.
I finally settled on the Chef's Choice Model 615, mainly based on the larger motor and the quality of the Chef's Choice brand overall.
I tried it out the day after Christmas (it was a present), first on a boneless pre-cooked ham, then on left over Prime Rib Roast (bones removed). I sliced the ham at the 1mm setting (deli sliced) and got a whole plate of uniformly sliced ham, with very little effort and little motor slow-down. The machine also only left about 1/4" of the butt end of the ham unsliced. Then I sliced the Prime Rib Roast at about 1/4" slices. Again, the effort was minimal and the resulting slices were very uniform.
Clean up was very easy, all the parts that needed to be removed from the machine for cleaning came apart easily, and went back together just as easy.
NOTES: Keep your hands away from the blade when operating (the design makes this easy), and be very careful when removing and cleaning the blade. I can assure you that it will slice fingers just as easily as it slices ham.
Let the blade do the cutting - don't force the meat through the blade faster than it will cut. This machine will cut very fast, but will not compare to a $1500, 12" Hobart Deli Slicer. I do think that you get a very good value for the money, and much better than most.
I gave the Chef's Choice Model 615 'Five Stars' for Quality, Value, and Ease of Use.
This Slicer is truly amazing and so simple to use and clean. I read through the manual. I think one of the positives is that the instructions are literally one page and covers EVERYTHING you need to operate and clean the slicer. Perhaps some of the other reviewers were looking for more "meat" to the manual; but you really don't need anything more than the instructions provided. The manual covers how to remove the blade, how to remove the carriage assembly, how to lubricate the moving parts (they recommend Vaseline, but I went with the Food Grade lubricant when I purchased the unit), and how to slice and adjust the thickness of the slices. Very simple.
So, the first thing I sliced was my cooked corned beef brisket. I went with different slice thicknesses; just to experiment. I was able to go with deli thin slices and was able to get thicker from there. Quite honestly, I couldn't resist sampling some of the slices; and before I got everything all sliced up, I made myself a Ruben sandwich and sliced up some cheese as well. It was perfect and the consistency of the corned beef and cheese slices were more than I expected.
Since I had the slicer out, I figured before I clean it, I might as well get ready for my beef jerky that I was going to make. I had an UNCOOKED Chuck Roast in the freezer. I thawed it out in the microwave to get it soft enough to slice, but still partially frozen. It took maybe 5 minutes to get it thawed out enough to slice. We like our jerky very thinly sliced; so I set the slicer to the 3rd setting for thickness. It sliced through the entire roast quick. The only caution I have here is to watch when you get close to the end. There is a "thumb protector" that attaches over the carriage and has sharp spikes that pierce the meat that you are slicing. When you get close to the end, you can actually drive those spikes into the blade. I didn't do any damage, but I wasn't really paying attention.
OK, so clean up time. I turned it off, removed the carriage assembly (it really glides very easily and effortlessly). I removed the blade (handle it VERY CAREFULLY AS IT IS VERY SHARP). A little warm soapy water and everything was all cleaned up. I wiped down the entire unit, used the lubricant I purchased to oil up the areas that need to be oiled before putting the blade back on, and it was all ready for me to use again.
I have used it a lot since the very first day. I must say that I was expecting it to be very loud (based on the other reviews); but I didn't think it was loud at all. My wife was in the other room one day and she didn't even hear me operating it. I mean, don't get me wrong, it does make noise; but it's not as loud as an electric kitchen knife. Quite honestly, it is probably one of the quieter appliances I have in my kitchen.
I would highly recommend this slicer. As I continue to use it, I will provide more feedback. I did order the non-serrated blade (still waiting for Amazon to ship) and I am contemplating ordering the sharpener, that sharpens both blades.
