My earlier sausages were with the Kitchenaid stuffer. It worked, but I never did like how it mushed up the sausage, how difficult it was to shove the meat into the chute, and how the stuffed sausage was 16 inches above the countertop.
One thing that I could not tell from the Amazon photos and description was about the air vent in the piston. I thought that it must be manually operated. But no, it is much more ingenious than that. There is a large foot on the bottom of the piston. When this contacts the meat, it closes the air valve.
I had no problem with the plastic stuffer tubes. I was using the medium one. Previously, air bubbles entering the Kitenaid stuffer seemed to be a big problem, so we were always pricking with a pin. With the LEM air introduced seems to travel back up the outside of the stuffer tube and not become a problem.
One of the best things is how little material is left when the piston bottoms out. Hardly enough to make a little sausage patty for tasting.
The box that this thing came in wasextra heavy duty cardboard, so will become the storage container for the stuffer for a long time.
Two C-clamps were included to aid in clamping it down. They're not perfectly suited to the job, but they do worked. I stuffed the first batch without clamping and it was OK. It took two hands on the stuffer, so the sausage was on its own. Then I clamped i down and had a free hand to manage the casing.
Cleanup was pretty quick. The plastic piston seemed to be a hydrophobic plastic that nothing adhered to, so it washed up easily..
My only complaint is that it could be just a bit bigger. Two of my three batches ALMOST fit into the cylinder, but not. So there was a bit of extra work to withdraw the piston and add the remaining mix before continuing.

I was, like many others have been, nearly ready to throw my KitchenAid "stuffer" attachment in the garbage, even complete with a load of delicious, delicious ground pig bits out of frustration. New swear words were invented (and I'm a sailor, so my vocabulary there was already pretty good!). New combinations of trusty standby swear words were invented. Worse -- I was ready to give up on the whole sausage idea. But, no! Homemade sausage is to good (and screamingly cheap!) to give up on after only two or three attempts. So, I gave this bad boy a shot at last-ditch redemption of the hobby.
It is -fantastic-.
Works like a charm, makes sausage stuffing almost trivially easy (still figuring out how best to load the casings, but that's the trickiest part), and saved my interest in the hobby, if not my waistline. It seems well built, sturdy, and easy to break down and clean. We'll see how it lasts, but I expect -many- pounds of deliciousness will be packed into tubes with this bad boy. Yes, it's manual, but not much effort seems to be required, and it is sanity-saving *quiet* while it works, as an added bonus. This one is a bit more than the absolute cheapest 5-pounders on the market, but the metal gearing brought peace of mind that was worth the slight additional cost, at least to me.
Free tip: While you're ordering anyway, add in some food-safe silicon spray and lube, to keep it in tip top shape.
Seriously, if you're new to sausage making, or even slightly frustrated by whatever you're currently using, it's like night and day vs. using a KitchenAid (or, I bet, any combo grinder/stuffer), and way less convoluted than options like a water-powered canon.
Do it. You know you want to! Think of all the deliciousness that will so easily come squirting out!
Early learning curve tips/tricks -
When you are getting set up, do it in this order - mount stuffer to table, load canister, put canister in press, crank the handle down until meat starts to appear in tube (before any comes out), Thread casing onto tube, Crank a little more - fill the tube with meat, tie the end of the casing in a knot. If you tie the casing off before you crank the plunger down, you will get a bunch of air in your casing , and it will make stuffing a little more challenging. It will still work fine, just kind of a pain.
Don't worry about feeding the casing. Let the machine and the pressure of the meat move the casing. I just held the casing/sausage as it fed out of the machine, and would give it a gentle squeeze to even out the meat as it was fed out. Worked great.
Keep your casing wet. Once you feed your wet casing onto the tube, you better be ready to make some sausage. Once the casing dries out, it will not feed very well. I kept a glass of water at hand and would rewet the casing as I worked. Overall, just do all of your prep before you load up the casing, and then run through your whole batch at once. The actual sausage stuffing part will take less than 5 minutes for a full canister.

☆ひとつマイナスとしたのは、以下のマイナーな2点によるものです:
①ハンドルを回すと、付け根部分から黒い金属クズが毎回落ちること(スタッファー内部には入りません)
②据え付けのために付属しているクランプが2つで内幅が6cmであり、取り付け場所を選ぶこと
ハンドルはとてもスムースに回転しますが、詰めたファルスを押し出す最後のところは、できるだけ使い切ろうとぐいぐい回しがち。
なので、取り付け位置への負荷も相当なものと推測します。
右利きの私はノズルが左に向く形に置いて、スタッファーの台座にあるボルト穴のところで、手前2箇所にクランプを締めています。
これはこれでまず問題なく使えていますが、向こう側の台座が時々浮くことがあり、多少気を遣います。
本当は手前と向こう側それぞれを1箇所ずつ締めたいところですが、うまい取り付け場所はそうそうありません。
ホームセンターで板とボルトを買ってきてスタッファーを取り付けてから、とも考えていますが、クランプ内幅も考えると、よく考えて作る必要がありそうです。
なお、ステンレスの筒の内側でファルスを押し出す円盤は硬質プラスチック製で、周囲に軟質プラスチックのリングがはまっていて、筒との隙間を埋める役目を果たしています(エンジンのピストンリングに相当)。
使用開始前に、このリングを外して洗浄することを強くお勧めします!
説明書(英文)には、使用前にパーツを洗剤液で洗えと書いてはありますが、このリングを外して、とは書いてありません。
最初外さずに相当何度も洗って、でもかすかなヌルつきは消えず。
アメリカ製品の大らかさは知っていますので、念の為と思い、箸の先端をリングの下に滑り込ませると外れましたが、絶句。
リング(断面は円形)がはまっていた溝(断面は四角形)には、黒ずんだグリースがこってり残っていました。
まあ、これくらいは買い手側の自己責任の範囲だと私は思いますけどね。
But the machine was so much easier to use than our kitchen aid - what a pleasure
